I made 2 other biskut raya, both permintaan The Little Misses and Bapak The Little Misses.
(Biskut raya permintaan Mak The Little Misses of course lah yang pertama I buat, hahaha).
One of my friends gave us some really nice home made biscotti masa dia khatam quran a month ago. Dia bagi 1 pack, I tak rasa langsung walau pun sekeping sebab it was totally demolished by The Little Misses in just a few hours.
Kalau you all tengok diaorang makan, memang macam tak pernah makan biscotti lah, hehehe.
Then masa I tengah sibuk2 buat biskut hari tu, they asked if I could make the same kind of biscotti as my friend’s instead of the usual ones that I’ve made before.
My friend’s biscotti ni were the really thin, wafer-like version that’s crispy and so easy to eat (macam makan keropok lah kiranya). Yang I selalu buat were the thicker versions which you have to dunk in coffee before lembut and senang nak makan without breaking your teeth, hehehe.
I know she uses just egg whites to make her biscotti while mine used whole eggs. And she told me the secret of cutting it thinly is by using reall sharp serrated knife and putting the cooked loaf in the fridge overnight.
So, for the past few days, jenuhlah I menggoogle cari recipe almond biscotti yang guna egg white semata2, yang kena simpan dalam fridge and yang guna serrated knife to cut, hehehe.
(you may ask kenapa I tak tanya kawan I ni aje on how to make it. Entah lah, I rasa segan nak tanya sebab she’s selling the biscotti as her business so I do not want her to feel awkward and ‘terpaksa’ bagi I her secret recipe. I rasa she will give it to me kalau I tanya. But saje je I nak cuba cari sendiri )
And I managed to make it, yeay…. (walaupun tak se smooth my friend’s which might be because of the sharpness of her knife and the not so sharpness of mine, but rasa dia kenalah dengan tekak we all. Miss 12 has given her stamp of approval so ok lah tu kan, hehehe.).
I used the almond biscotti recipe from here. But if you google almond bread/biscotti, you will find a few different versions so kalau you all ada lebih2 egg whites and nak cuba buat, just use whichever version yang you all berkenan di hati.
And I also made chewy anzac biscuits. So now ni, biskut I dah bertambah dua tapi dah berkurang satu (sebab cornflakes meringue sudah habis!).
They like the chewy version than the crisper version of the anzac biscuits. I guna recipe ini untuk buat anzac biscuits. If you want them crispier, just bake them for a few minutes longer.
