I felt like baking today. I wanted to have something sweet after dinner and also to finish up the old decrepit looking apples in the fridge, hehehe.
So I made free-form apple pie. It’s called free-form because you don’t need a pie pan to bake this apple pie.
I used this recipe for the pie base. It tastes a bit shortbread-y but just right for this kind of pie .
The apples pulak, I cored them and sliced them into rings. Then I cooked them with a bit of brown sugar and a bit of lemon juice until cooked and not watery anymore. Let it cool completely before filling it into the base.
Once the dough’s ready, I rolled it into a big round size on a baking paper. Leaving a 3cm border, sprinkle hazelnut meal/ ground hazelnut over pastry. Top it with the cooked apple. Then fold the pastry edge onto the apple filling, leaving half exposed. Then I brushed the leftover eggwhite on the pastry top, sprinkle some sugar and flaked almonds on it. Baked it at 200°C until golden colour.
Pastu, makan dengan vanilla ice cream . Heaven on earth, hehehe…..
The Other Half had 2 helpings of the apple pie. He said he’s not counting his calories tonight, hahaha. I guess he’s already below 73kg so he’s not too worried if he occasionally splurges.
Then, tak satisfied with only baking apple pie, I baked pizza for dinner.
The Little Misses had saveloy pizza with cheesy crust.
I rolled the edges over grated cheddar but I’m not sure they noticed it or not….
And we had pineapple n onion pizza eaten with grilled mixed seafood and salad.
Mussels, prawns, squid and fish fillets, yummmmm!!!!!!
