Recipe Cottage Pie as requested :-). Malam ni ter rajin sikit pulak nya nak type recipe, selalunya dah berhari2/ berminggu orang mintak, baru lah I rajin letak recipe, hehehe….

Cottage pie

Ingredients (serves 6)
  • 2 tablespoons (40mls) olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 500g beef mince
  • 2 teaspoons chicken/beef powdered stock (tak payah letak kalau dah pakai liquid stock)
  • 1/2 cup water ( or you can ganti dengan chicken stock in liquid form)
  • 400g can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 cups of frozen mixed vegetables (I used the corns,carrots,peas mixed)
  • 1 tablespoon (20mls) worcesteshire sauce
  • salt and pepper to taste

For the mashed potato topping:

  • 700g-1 kg potatoes, peeled, diced and boiled until tender and drained
  • 2 tablespoon (40g) butter
  • 1/4 cup cream (or warm fresh milk kalau takde cream)
  • 125g tasty cheese, finely grated
  • salt and pepper to taste
Method
  1. Heat 2 tablespoons of oil in a saucepan over medium heat. Cook onion and garlic until soft.
  2. Increase heat to high. Add mince. Cook and break up and stir the mince until browned. Add tomato paste, stock, water, worcesteshire sauce and canned tomatoes. Bring to the boil. Reduce heat to medium-low. Simmer, partially covered until the liquid has reduced and the sauce has thickened. Add the frozen vegetables. Cook for about 2-3 minutes.
  3. Preheat oven to 200°C. Grease an ovenproof dish. Spoon in mince and ratakan the top.
  4. Mash the potatoes and add the butter, cream/ warm milk and grated cheese and mix until well combined. Season with salt and pepper.
  5. Top the mince mixture with the mashed potato and rough the potato up using a fork. If nak lagi bercheese, boleh lah kalau you all nak tabur mozarella cheese on the mashed potatoes. (but your arteries wont like it, I can tell you, hehehehe).
  6. Bake for 30-40 minutes or until the mashed potato is golden. If your oven is like mine, maybe you can grill it at the end so the top will become golden brown.

buat jgn tak buat, hehehe. Snng aje nak membuatnya tp leceh sikit sbb nak kena buat mince tu dulu, pastu mash potatoes lagi. But bila dah makan mmng tak ingat lah, hahaha
