Enchiladas for dinner

We had beef mince enchiladas for dinner tonite.

But I made it using a new recipe and The Other Half kata, “that’s the best enchiladas you’ve made!

I sebenarnya tak pernah tau macam mana rasa the real McCoy enchiladas ni so bila buat baked tortillas selama ni, I just assume that’s the real enchiladas, hahaha.

But tadi I saje2 Googled enchiladas recipe and I found this site and she showed how to make homemade enchilada sauce.

I pun buatlah the enchilada her style (except for the filling which I made my style sebab zucchinis kat kebun tak masak lagi, heeee).

And I wrapped the tortillas into parcels while she left hers open at the ends.

Memang sedap!!!! 

I think the enchilada sauce tu yang buat dia lagi terangkat.

But I tak letak chilli powder banyak sangat sbb tak nak budak2 tu kepedasan.

Even Miss 13 siap tambah lagi and wants it for her lunch at school esok which shows how sedap it is lah kan Smile.

For the filling I used diced carrots and diced capsicum instead of zucchinis and I added a bit of powdered chicken stock to the beef+vege mixture.

I used 12 medium sized tortillas to make the enchilada parcels tadi and we finished 8 for dinner!

So, cukup leftovers untuk The Other Half bawak 2 parcels for his lunch, Miss 13 bawak 1 and Miss 9 bawak 1.

I pulak will eat whatever I can find in the fridge for lunch, hehehehehe……

Our first Spring harvest

The tomato plants have finally produced some ripe tomatoes, yeay!

Sungguh seronok lah Miss 9 menjalankan kerja wajib dia in Spring and Summer iaitu memetik buah tomato, hehehe.

And we also harvested some spinach and some basil leaves.

And some sage leaves (which I forgot to take a photo of).

Bila dah ada basil, tomato and sage, pasta was our first choice for dinner lah kan.

As usual, The Other Half wanted his usual gnocchi with sage and pine nuts in burnt butter.

Tekak dia upmarket sikit malam ni, nak food yang slightly a bit more posh than just pesto pasta, hehehehe….

And we all yang tekak orang biasa tak posh ni, makan basil pesto pasta aje lah, kahkahkahkah….

I made basil pesto using cashew nuts, basil, garlic, parmesan cheese and olive oil.

And I used fettucine sebab I think fettucine goes so well with pesto.

Makan dengan crumbed chicken breast patty (kedai mari) and sauteed spinach.

Once all the veges have reached maturity, bolehlah start makan tanaman sendiri kan and bolehlah reduce the grocery bills a bit.

But bill air pulak naik sebab kena siram tanaman hari2, hahahaha…..

Another weekly garden update

Woke up this morning with only one thought..

Yeay, I can spend time in the garden with The Other Half finishing all the projects.Smile

The Other Half pulak bangun asking UNenthusiastically, “Is there much that needs to be done in the garden?

Hehehehe…

Walaupun he was unenthused, but after a cup of coffee and a few home-made blueberry, macadamia and white choc muffins, he straight away went into the garden with gusto.

See what a cup of coffee and great muffins can do to you, hahahaha…

Someone said the other day yang our garden must be the nicest looking garden on the street…

And I jawab, “jauh sekali! sebab I haven’t shown you our lawn yet! kalau you all tengok our lawn, mau pengsan agaknya Smile“.

Penuh dengan dandelions!!!!!!!

Dandelions are pesky weeds, sangat lah senang nak membiak especially during wet Spring season.

And they are so difficult to cabut because they are quite deeply rooted. Memang kena spray with weed killer baru mati.

But kat Bunnings, ada jual dandelions ni under ‘herbs’ category sebab memang boleh makan the leaves as salad. Diaorang jual for $4/pot.

I rasa nak aje I suruh sape2 yang nak dandelions buat salad ni to come to my house and bersihkan my lawn from it, hehehe….

So, one of the jobs that The Other Half had to do tadi was to mow the lawn and to clean up the edges of the lawn.

Dah kemas sikit rupa our lawn petang tadi. But he still needs to poison the weeds tomorrow so tak membiak again.

And we also managed to go to our favourite Bunnings to buy a trellis and also a pot of raspberry and a pot of boysenberry.

We bought these 2 plants sebab nak letak against the fence on the other side of the house.

This is one of the vulnerable spots around of house, senang untuk pencuri panjat masuk to enter the undercover area.

Kat sini tak boleh nak letak broken glass sewenang2 nya along the fences to deter pencuri. Nak letak spiky things pun tak boleh rasanya.

Kalau people aka pencuri yang climb up the fences and cedera kena broken glass, we can be sued and held liable for the injuries. Stupid kan!

The next best thing is either to plant climbing roses that have loads of thorns or to plant berries that have loads of thorns as well.

We opted for berries. Tu yang beli raspberries and boysenberries because they have thorns! And they can grow quite tall and produce berries which is a big bonus Smile.

Tapi kan……nak tunggu dia besar and penuh thorns and memanjat the trellis tu, mau lah kot makan masa 2 tahun, itupun kalau tak mati lah, hahahahahahaha…..

So, since the berries have taken that spot, we had to move the watermelon pot further along the garden.

Our garden beds are also getting along quite nicely at the moment.

Kalau all these blueberries menjadi semuanya, alangkah seronoknya!!!!!!!!!!!!!!!!!!!!!!!!!

Lepas habis The Other Half mowed the lawn and lepas we all siap membaja semua plants and the lawn, we let Miss 9 played in the sprinkler while the sprinkler is watering the lawn.

It’s a seasonal thing…..

Thank you all for all the get well wishes.

Alhamdulillah, I woke up this morning feeling so much better!

No more sneezing, no more itchy eyes and face and no more runny and blocked nose.

And I didn’t even take any antihistamine.

Even Miss 9  pun woke up without any symptoms.

All the allergenic pollens must have gone from the air around here, so tu yang takde hayfever symptoms.

Miss 13 kata most of her friends pun tengah kena teruk jugak hayfever sekarang. She said one of them kena lagi teruk dari I, the whole face red with swollen eyes semua.

This is what happens when you live  in Australia, the Land of pollens, in Spring time.

Every year, ada aje news on which pollen’s causing the most reaction in people suffering from hayfever.

This year they blame it on olive trees and water-stressed plants.

From the news online, one of the Immunologists said that because a lot of plants are lacking water this season due to lack of rain during the Winter months, the plants get stressed and so they produce more noxious proteins so the pollens they produce are more allergenic to humans.

Tu sebab bila I balik Msia, I tak kena hayfever sebab asik hujan aje sokmo, hahahahaha.

Oh well….. One of those things….

Malam ni for dinner I made ovenbaked chicken drumsticks, makan dengan oven baked chips, corn on the cob and colourful salad.

When The Other Half saw the salad bowl, he said, “I think you’ve gone overboard this time with the salad. It looks like you don’t know whether to serve us fruits or vegetables Smile“.

I said to him, “We need to have more veges and more fruits in our diets. And since your wife is too lazy to serve fruits after dinner, I might as well mixed them both and serve them as salad.”

So, tu yang salad we all tadi ada cucumber, capsicum, carrots, tomatoes, avocado, apple and navel orange. All in their raw forms.

Memang macam traffic light lah our salad tadi, semua kaler ada, hikhikhik.

I asked the girls whether it would be nice to add strawberries in the salad.

Miss 13 yang tak suka langsung strawberries terus put her foot down and said that she’s not going to eat the salad if I put strawbs in it.

While Miss 9 yang suka sangat2 strawberries begged me to put strawbs in it, hehehe…

I ended up tak letak strawberries sebab kesian kat Miss 13 Smile.

Yang ini pulak, saje nak tunjuk gambar our front door at night time.

The worst hayfever season definitely!

Miss 9 and I are suffering badly from hayfever today.

Dah makan ubat pun tak jalan jugak….

Our eyes are watery and itchy, our faces are itchy everywhere including the roof of our mouths, our noses are bright red like Rudolph but Rudolph has dry nose, ours are runny, and we have been having severe bouts of sneezing since this morning.

Now I can’t smell anything so taste sense pun haywire jugak lah.

There’s something that’s in the air that’s bothering us but we have no idea what it is.

Bila teruk tu, even tengah tidur pun boleh terbangun sebab dapat bouts of sneezing and unstoppable runny nose.

And tissues are our best friends when antihistamines don’t work anymore.

Yang peliknya The Other Half and Miss 13 sikit pun tak suffer from hayfever ni.

I would never wish it on any of my enemies because it is not a good thing to have at all.

But, walaupun tak dapat rasa anything, makan still jalan! heheheheh……

I made spinach and feta bread rolls with meatballs in creamy tomato gravy and mixed salad.

Semua I letak feta cheese. the bread rolls ada feta, the meatballs ada feta, even the salad pun ada feta, hahahahaha…

The bread rolls yang tak digemari oleh hantu bread kat rumah ni i.e. Miss 13 sebab ada ‘green stuff and feta’ in the middle, hehehe….

Kalau kosong, dia boleh habiskan 1 whole big loaf all by herself!

i love dinners like this…

Where you only need

Pasta

Cooked chicken meat (which I found in my magic freezer from leftover roast chicken that I cooked a few weeks ago Smile).

A jar of Leggo’s tomato, ricotta and spinach pasta bake sauce.

Grated cheese

Frozen peas

And taadaaaa!!!!!

Diiner is ready in about half an hour.

Cuma boil the pasta, tuang and mixed semua together and masuk kan dalam oven until the cheese has melted…….

But sometimes, I feel slightly guilty bila hidang dinners macam ni sebab I rasa macam I tak masak aje.

Uncle Leggo’s yang masak….

Kureng lah sikit title ibu and isteri mithali kan, hahahaha Smile with tongue out.

But salad tu I buat sendiri tau!

I petik the lettuce from the garden, cut the cucumbers, apples and capsicum myself instead of using the ready made sald mix sold at the shop, hehehehe….

They go back to school tomorrow

Today is the last day of the school holiday so we took the girls to San Churros this afternoon as a treat.

Kesian diaorang, we really did not go anywhere during the hols.

We only went whale watching, Miss 13 had her sleepover, Miss 9 had her hair transformation and they went for a long swim n slide at the aquatic centre nearby.

The rest of the time, we just stayed at home not doing anything much, hehehe.

But they haven’t complained so I guess they were happy with just staying at home.

Tomorrow they’ll start Term 4 which is the last term for this year.

It’s going to be a 9-week school term and then followed by a long 7-week Summer break.

Yang Summer break lagi panjang tu pun we still haven’t got anything planned yet!

The Other Half and I keep on saying that we do need to go somewhere for a vacation  tapi still tak tau nak pergi mana and The Other half still tak tau bila boleh ambik cuti…

Hish….. tu yang malas nak plan awal2 kadang2…..

Macam dinner malam ni pun, tak plan awal2, balik dari San Churros tadi baru terfikir nak masak apa for dinner.

Kat dalam magic freezer I ada lagi lebihan kuah kari laksa ayam yang I simpan dari open house hari raya hari tu.

Punyalah lama giler I simpan kan, hahahaha.

Since disimpan dalam freezer, still ok lagi.

For the adults, I just reheat the frozen kuah kari laksa.

But for the kids, kena lah fikir buat dinner lain.

Miss 9 was happy when I asked her if she wanted mee sup for dinner.

But Miss 13 terus buat muka sedih so for her I masakkan chips and beef schnitzel (also yang I jumpa in the freezer, hehehe).

Memang macam restoran lah rumah I tadi, ada 3 dishes for dinner.

Mee kari, mee soup with meatballs and schnitzel and chips Smile.

The meatballs I buat sendiri. I just blend bawang, garlic, beef mince, salt, white pepper and a bit of tepung ubi.

I tak tau rasa dia macam mana sebab I tak rasa pun tadi but Miss 9 siap asked for a second helping so I guess kenalah dengan her taste kan, hikhikhik….

Dah laaaamaaaaa we all tak makan mee kari, kiranya sejak open house hari tu lah when we had an overdose f mee kari, so memang sedap sangat2 lah rasanya tadi, heeeeee…..
